Pancake Day is a flipping fantastic tradition in the UK. Also known as Shrove Tuesday, it marks the day before Lent begins. People have been making, tossing, and eating pancakes for centuries. The History of Shrove Tuesday

Shrove Tuesday has its roots in Christianity, particularly in the Catholic and Anglican traditions. It marks the last day before Lent, a 40-day period of fasting and reflection leading up to Easter. During Lent, Christians remember the 40 days Jesus spent fasting in the desert. Many give up rich foods like eggs, milk, and butter as a form of discipline and devotion.

The word "shrove" comes from the old English word "shrive," meaning to confess sins and receive absolution. In medieval times, people would go to church to be "shriven" (forgiven) before the solemn season of Lent began. Over time, the focus shifted from confession to feasting, and pancakes became a way to use up forbidden ingredients before the fast.

Yorkshire's Unique Pancake Traditions

Yorkshire is known for its great food, and pancakes are no exception. In the past, pancake races were a big deal. One of the most famous was in Scarborough. The town still celebrates by closing the roads so people can skip along with their pancakes!

In 2019, the town of Ripon hosted a giant pancake race through the marketplace. Local businesses and schools competed, flipping as they ran. It was a real batter battle!

Ingredients for the perfect pancakes

The Perfect Pancake Recipe

Making the perfect pancake is easy. Here’s what you need:

  • 100g plain flour

  • 2 eggs

  • 300ml milk

  • A pinch of salt

  • Butter for frying

How to make them:

  1. Put the flour and salt in a bowl.

  2. Crack in the eggs and whisk together.

  3. Gradually add the milk, whisking until smooth.

  4. Heat a little butter in a pan.

  5. Pour in some batter and cook for 1–2 minutes.

  6. Flip (carefully!) and cook the other side.

  7. Serve hot with your favourite toppings.

Toppings: Sweet or Savoury?

The classic topping is sugar and lemon. Simple but delicious.

Common Pancake Mistakes and How to Fix Them

1. Overmixing the Batter

  • Mistake: Stirring the batter too much can develop the gluten in the flour, making the pancakes tough instead of fluffy.
  • Best Practice: Mix the batter until the dry ingredients are just combined. A few lumps are fine—overmixing is worse than a slightly uneven batter.

2. Using the Wrong Pan or Temperature

  • Mistake: Cooking on a pan that’s too hot can burn the outside while leaving the inside raw. A pan that's too cool leads to pale, tough pancakes.

  • Mistake: Too much butter makes pancakes greasy, while too little can make them stick.
  • Best Practice: Lightly grease the pan with butter or oil and wipe off any excess with a paper towel to avoid pooling.

6. Flipping Too Early or Too Often

  • Best Practice: Flip only once, when bubbles appear on the surface and the edges look set (usually around 2–3 minutes per side).

7. Pressing the Pancakes Down

  • Best Practice: Let the pancakes cook naturally—don’t press them down.

8. Using Cold Ingredients

  • Mistake: Cold milk, eggs, or butter can cause an uneven texture.
  • Best Practice: Use room-temperature ingredients for better consistency and even cooking.

9. Measuring Incorrectly

  • Mistake: Guessing ingredient amounts can lead to dry, runny, or dense pancakes.
  • Best Practice: Use measuring cups and spoons for accuracy, especially with flour and baking powder.

10. Not Keeping Pancakes Warm

  • Mistake: Letting pancakes sit at room temperature while making the rest can make them soggy.
  • Best Practice: Keep pancakes warm in an oven at 90°C (200°F) on a wire rack to maintain crisp edges.

Final Tips for the Best Pancakes

  • Use buttermilk instead of regular milk for extra fluffiness.
  • Add vanilla or cinnamon for more flavour.
  • Don’t over-grease the pan—a thin layer of butter or oil is enough.
  • Experiment with mix-ins (blueberries, chocolate chips, or bananas) for extra taste.
